Picual is the most widely cultivated olive variety in Spain and in the world, with its heart in Jaén, which supplies over 20% of global olive oil production. It stands out for its extraordinary oxidative stability due to its high polyphenol content, making it ideal for high-heat cooking. Its oils have an intense profile: green grassy fruitiness with notes of olive leaf and tomato, and pronounced pungency and bitterness that signal its quality and antioxidant richness.
